Chinese Rice Wine is an alcoholic beverage fermented using rice and wheat. As a traditional alcoholic drink, Chinese Rice Wine has been popular in China for centuries and honored as a national banquet. Typical spoilage of Chinese Rice Wine is characterized by turbidity, acidity, and off-flavors caused by the formation of side metabolites. In order to investigate the yellow rice wine spoilage accidents, the high throughput sequencing method was used to analyze the microorganism community structure in the spoilage aging rice wine. we performed high throughput metagenomics sequencing to examine the spoilage Chinese Rice Wine samples in the V3-V4 region of the bacteria 16S rRNA gene. |
